Asian Tomato Rice
- 3 tablespoons oil
- 2 shallots, minced (optional)
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 2 tablespoons soy sauce or 1 -2 teaspoon fish sauce or 12-1 12 teaspoon maggi seasoning sauce
- 18 teaspoon Chinese five spice powder
- 4 cups cooked and chilled jasmine rice
- salt, as needed
- ground black pepper, as needed
- cilantro, as needed
- In a large nonstick frying pan put the oil, shallots and garlic.
- Cook over medium heat for 2 or 3 minutes until the edges of the garlic are a light brown.
- Stir in the tomato paste, soy sauce, and Chinese 5 spice powder and cook for another minute.
- Add the rice and stir until well blended.
- Add salt and ground black pepper to taste if desired.
- Garnish with chopped fresh cilantro or a thinly sliced green onion.
- Variations: Stir in 1/4 - 1/2 cup frozen peas the last 2 minutes and/or add a cooked scrambled egg.
