Microwave Chicken Ole
- 6 chicken breast halves, skinned
- 1 pkg. taco seasoning mix
- 1/2 tsp. salt
- 1/4 tsp. garlic powder
- 1 (16 oz.) can sliced baby tomatoes
- 1 (6 oz.) can pitted black olives, drained and sliced
- 1 onion, slivered
- 1 (4 oz.) can chopped green chilies
- 1/4 c. chicken broth
- 2 Tbsp. cornstarch
- 1/4 c. water
- 1 (8 oz.) carton cream
- 1 pkg. corn chips
- Mix together taco seasoning, salt and garlic powder.
- Add chicken to coat.
- In shallow glass baking pan, place chicken. Cover with wax paper.
- Microwave on High for 5 minutes.
- Turn. Uncover and cook 5 minutes.
- Place tomatoes, olives, onion and chilies over chicken; pour broth over all.
- Cover and microwave, turning once, on High about 12 minutes.
- Remove from oven; let stand, covered, for 5 minutes.
- Return to oven for additional cooking if not fork-tender.
- Remove chicken to serving platter. Mix cornstarch and water; add to vegetables in dish and microwave for 3 minutes, stirring every minute until thick.
- Pour over chicken.
- Top with sour cream and chips.
