Sticky BBQ Spareribs

  1. Heat the oven to 400 degrees F. In a small bowl, combine the ketchup and hoisin.
  2. Season the ribs with 1/2 teaspoon pepper.
  3. Place the ribs in a large ovenproof baking dish (cut the rack in half if necessary).
  4. Pour the ketchup mixture over the ribs, turning to coat evenly.
  5. Cover the dish with foil and bake for 1 hour.
  6. Remove the foil and continue baking until the meat is tender, easily pulls away from the bone and the glaze is beginning to char, 20 to 25 minutes.
  7. Transfer the rack to a cutting board and cut into pieces.
  8. Serve with bok choy and sticky rice, if desired.
