San Francisco Black Bean and Corn Stew
- 1/4 cup dry sherry
- 2 cups chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrot
- 1/2 cup chopped red bell pepper
- 4 cups cooked black beans
- 2 cups frozen corn
- 2 cups vegetable broth
- 2 tbsp. minced garlic
- 1 cup chopped tomatoes
- 2 tsp. cumin powder
- 1-1/3 tbsp. chili powder
- 1/2 tsp. dried oregano
- 1/4 cup freshly chopped cilantro
- 2 tbsp. honey
- 2 tbsp. tomato paste
- In a large soup pot over medium-high heat, add sherry (or apple juice if you prefer).
- When hot, add onions.
- Saute, stirring, until soft but not brown.
- Add celery, carrot and bell pepper; saute 5 minutes.
- Add remaining ingredients; bring to a boil.
- Lower heat; simmer 15 minutes.
