Braised Fragrant Pork Recipe

  2. Soak tangerine peel.

  4. Cut pork in 1-inch cubes.
  5. Slice scallion and ginger root.

  7. Heat oil to smoking in a heavy pan and brown pork quickly on all sides.

  9. Add in sherry, soy sauce, anise pwdr, cinnamon, cloves, salt and water.
  10. Bring to a boil.

  12. Add in tangerine peel, sliced scallion and ginger root.
  13. Then simmer, covered, till tender (about 1-1/2 hrs), turning meat occasionally.
  14. NOTE: If water evaporates, add in a small quantity of boiling water to prevent burning.
