Pickled Vegetable Salad Recipe
- 1 (16 ounce.) can white corn, liquid removed
- 1 (16 ounce.) can sm. green peas, liquid removed
- 1 (16 ounce.) can French cut green beans, liquid removed
- 1 c. minced onion
- 1 c. minced celery
- 1 c. minced green pepper
- 1 c. minced red pepper
- 3/4 c. vinegar
- 1 tbsp. salt
- 1 c. sugar
- 1/2 c. oil
- 1/2 teaspoon pepper
- 1 tbsp. water
- Drain and mix corn, peas and green beans.
- Add in minced onion, celery and peppers.
- Combine vinegar, salt, sugar, oil, pepper and water; bring to a boil.
- Cold and then pour over vegetable mix.
- This goes a long way and is good for a picnic.
