Citrus Mediterranean Green Bean Salad
- 1 pound green beans
- 4 ounces feta cheese
- 1/4 cup red onion very thinly sliced
- 3 each marjoram sprig leaves stripped and roughly chopped, or oregano
- 3 1/2 tablespoons olive oil, extra-virgin
- 1 each lemon juiced and zested
- 1 pinch sugar or honey
- Bring a pot of salted water to boil.
- Add green beans, either boil or steam, for 3 to 5 minutes or tender-crisp.
- Drain and rinse in cold water to stop cooking.
- Mix together lemon juice, zest, olive oil and sugar or honey in a small bowl until well blended.
- Toss beans and red onion, crumbled cheese, and marjoram in a large bowl with the dressing until evenly coated and well mixed.
- Keep refrigerate for at least 15 minutes to let the flavor marry, or up to 2 hours.
- Serve with roast or barbecue or any main course.
