Citrus Mediterranean Green Bean Salad

  1. Bring a pot of salted water to boil.
  2. Add green beans, either boil or steam, for 3 to 5 minutes or tender-crisp.
  3. Drain and rinse in cold water to stop cooking.
  4. Mix together lemon juice, zest, olive oil and sugar or honey in a small bowl until well blended.
  5. Toss beans and red onion, crumbled cheese, and marjoram in a large bowl with the dressing until evenly coated and well mixed.
  6. Keep refrigerate for at least 15 minutes to let the flavor marry, or up to 2 hours.
  7. Serve with roast or barbecue or any main course.
