Cinnamon Apple Salad
- 1/2 c. red cinnamon candies
- 1 tsp. lemon juice
- 2 c. water
- 8 3/4 oz. can crushed pineapple
- 6 small tart apples, pared, cored and drained
- 1 (3 oz.) pkg. cream cheese, softened
- 1/3 c. snipped dates
- 2 Tbsp. milk
- 2 Tbsp. chopped nuts
- lettuce
- In 3 quart
- saucepan,
- cook
- cinnamon
- candies in water until dissolved.tdd apples
- and cook slowly, uncovered, just until tender, about 15
- to
- 20
- minutes,turning
- once during cooking. Refrigerate applestn
- syrup several hours, turning once.tAs the apples stand,
- they absorb the bright red color of the candies.) Blend
- together
- cream cheese, milk and lemon juice until smooth and creamy.
- Add pineapple, dates and nuts. Drain apples.
- Stuff centers with cream cheese mixture.
- Serve on lettuce-lined plates.
- Makes 6 servings.
