Bongo Bongo Banana Bread
- 3/4 c. mashed banana
- 1/3 c. vegetable oil
- 2 eggs
- 1/2 c. unsweetened apple juice concentrate
- 1 c. flour
- 1 c. whole wheat flour
- 1/3 c. wheat germ
- 1 tsp. baking soda
- 3 tsp. baking powder
- 1/2 c. raisins
- 1/2 tsp. each: cinnamon and nutmeg
- Preheat oven to 325u0b0.
- In a blender jar, combine apple juice concentrate and raisins.
- Puree until raisins are completely chopped.
- Pour this mixture into a large mixing bowl; add the mashed banana, oil and eggs.
- Beat thoroughly.
- Add the flours, wheat germ, baking soda, baking powder and spices.
- Mix thoroughly. Coat a loaf pan with vegetable cooking spray and spoon in the batter, spreading it evenly.
- Bake for approximately 45 minutes, until an inserted knife comes out clean.
