Stir-Fry Beef With Tomatoes
- 2 lb. sirloin, round, flank or chuck steak
- 2 Tbsp. sugar
- 1/2 c. soy sauce
- 1 clove minced garlic
- 1/4 tsp. ginger
- 1/4 c. water
- 3 Tbsp. salad oil
- 2 large green peppers, cut in strips
- 3 green onions with tops, sliced
- 2 large tomatoes, cut in wedges
- 1 Tbsp. cornstarch
- Freeze steak for 30 minutes, then slice diagonally across grain in 1/8-inch thick slices.
- In 2-cup glass measure combine sugar, soy sauce, garlic and ginger.
- Pour over sliced meat in medium bowl.
- Marinate at least 30 minutes, turning meat after 15 minutes. Heat microwave browning dish for 6 minutes or until very hot. Remove meat from marinade, reserving extra.
- Add oil and meat; microwave 5 to 6 minutes on High, stirring halfway through cooking. Add green peppers and onion.
- Microwave on High 4 to 5 minutes, stirring halfway through cooking.
- Top with tomato wedges.
- In a 1-cup glass measure combine cornstarch, water and remaining marinade.
- Microwave 1 to 2 minutes more.
- Let stand for 5 minutes. Serve on cooked rice.
