Spicy Raisin Bean Muffins
- 1 cup pinto beans
- 3/4 cup milk
- 2 each egg whites
- 1/4 cup vegetable oil
- 1/2 cup brown sugar packed
- 1 1/2 cups flour, all-purpose
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/2 cup raisins, seedless
- Puree beans with milk in blender or food processor until smooth, transfer to bowl.
- Beat in egg whites, oil and brown sugar.
- Combine ingredients are moistened.
- Spoon into greased or paper-lined muffin until golden.
