Fried Rice
- 3 1/2 to 4 c. cooked long grain rice
- 3 Tbsp. peanut or vegetable oil
- 1 egg
- 4 green onions with tops, sliced
- 1 clove garlic, minced
- 1/2 lb. small shrimp, cleaned
- 1/2 c. soy sauce
- 1/2 c. sliced water chestnuts
- 1 c. cooked green peas
- 1/4 c. cooked chopped carrot
- Chill rice in refrigerator.
- In Farberware electric wok, add 1 tablespoon of oil.
- Set heat control dial at 200u0b0.
- When light goes out, add egg and scramble.
- Remove and set aside.
- Turn heat control dial to 250u0b0 and add remaining oil, onions and garlic. Stir-fry about 1 minute.
- Stir in shrimp and water chestnuts; cook cold rice and soy sauce until well mixed, then stir in peas, carrot and egg.
- Stir constantly until hot.
- Makes 4 to 6 servings.
