Carrot and Cilantro Couscous
- 1 12 cups chicken broth
- 1 cup couscous
- 1 medium carrot, grated
- 12 cup fresh cilantro leaves, chopped
- 1 tablespoon olive oil
- salt and pepper
- Bring to boil the chicken broth and carrots in a small saucepan.
- Stir in the couscous and cover, remove from heat.
- Let stand 5 minutes.
- Fluff couscous with a fork, stir in cilantro and oil.
- Add salt and pepper if needed.
