Carrot and Cilantro Couscous

  1. Bring to boil the chicken broth and carrots in a small saucepan.
  2. Stir in the couscous and cover, remove from heat.
  3. Let stand 5 minutes.
  4. Fluff couscous with a fork, stir in cilantro and oil.
  5. Add salt and pepper if needed.
