Spinach Salad With Mint
- 14 cup oil
- 1 12 tablespoons fresh lemon juice
- 14 cup finely chopped mint
- 14 teaspoon sugar
- 14 teaspoon pepper
- 18 teaspoon salt
- 6 cups torn spinach
- 1 peeled segmented pink grapefruit
- 2 thinly sliced green onions
- 3 tablespoons poppy seed dressing
- Whisk 1/4 cup olive oil with 1 1/2 tablespoons lemon juice, 1/4 cup finely chopped mint, sugar, pepper and salt.
- Combine spinach with the grapefruit and green onion.
- Toss with poppy seed dressing, and chopped mint mixture.
