Baked Greek Flat-Iron Steak (Yia-Yias Way)
- 1 whole (8 Oz. Size) Beef Chuck Top Blade (Flat Iron Steak)
- 1 whole Lemon (for Zest And Juice)
- 1 Tablespoon Greek Imported Olive Oil
- 1 Tablespoon Butter
- 1/4 teaspoons Salt
- 1/4 teaspoons Black Pepper
- 1 teaspoon Rosemary
- 1/2 teaspoons Greek Oregano
- 1 cup Grape Tomatoes (any Color, Halved)
- 1/4 cups Pitted Kalamata Olives, Halved
- 1/2 cups Feta Cheese Crumbles
- Preheat oven to 375 F. On a clean cutting board cut the flat-iron steak in half horizontally.
- Zest the lemon and set aside.
- Cut lemon in half.
- In a skillet (12) over medium-low heat add Greek olive oil and butter.
- Once melted together add the two flat iron steaks and sprinkle with salt, black pepper, rosemary and Greek oregano.
- Saute steaks for 2 minutes on each side.
- Add halved grape tomatoes, olives, lemon zest and juice and cover skillet (using foil is fine).
- Place the skillet in the oven and bake at 375 F for 10 minutes.
- Remove from oven and serve each steak onto an individual plate and add Feta cheese crumbles.
- This is excellent with a Greek salad and side vegetable dish.
