Huff-Puffer Supper

  1. Cook burger, green pepper and onion in small amount of oil until transparent.
  2. Stir in salt, zucchini, mushrooms, oregano, garlic and chili powder.
  3. Cover and let cook until zucchini is tender, about 7 minutes, then add corn, beans, olives and tomato. Cook, uncovered, over medium heat for 10 minutes.
  4. Just before serving, stir in the cheeses.
  5. Fill pocket bread that has been cut in halves and serve.
