Autumn Vegetable Succotash Recipe
- 1/2 c. unsalted butter
- 1 med onion diced
- 2 x garlic cloves minced fine
- 2 x red bell peppers diced
- 2 x zucchini diced
- 2 x yellow summer squash diced
- 1 c. frzn lima beans
- 1 c. fresh or possibly frzn corn kernels Salt Freshly grnd pepper
- 2 Tbsp. sage minced
- In a skillet over medium-high heat, heat butter.
- Add in onion; cook till translucent/soft, 2 min.
- Add in garlic, bell peppers, zucchini, squash, lima beans, and corn.
- Season with salt and black pepper; cook, stirring, till vegetables are tender, 10 min.
- Stir in sage, and serve.
- Serves 8.
