Avocado Mango Donburi
- 2 Tablespoons Freshly Squeezed Lime Juice
- 1- 1/2 teaspoon Lemon Curd
- 1 teaspoon Soy Sauce
- 1 Tablespoon Warm Water
- 1 teaspoon Finely Grated Lime Zest
- 1 teaspoon Freshly Grated Ginger
- 1 whole (about 8 Oz. Size) Ripe Avocado, Chopped
- 1 whole (about 12 Oz. Size) Ripe Mango, Chopped
- 2 cups Steamed Japanese Rice

- Whisk together the lime juice, lemon curd, soy sauce, water, lime zest, and ginger in a medium-size bowl.

- Add the chopped avocado and mango and toss to coat in the sauce.
- 3.
- Separate the rice into two bowls and top with the avocado mango mixture.
- Serve immediately.
