Apple-Flax Vinaigrette
- 1/4 cup cider vinegar
- 2 tsp. Dijon mustard
- 1/2 tsp. ground coriander
- 1/2 tsp. cracked black pepper
- 1/2 cup flaxseed oil
- 1/4 cup extra-virgin olive oil
- 1 cup apple cider
- 2 Tbs. shoyu, tamari or reduced-sodium soy sauce
- In medium bowl, combine vinegar, mustard, coriander and pepper.
- Gradually whisk in both oils until well blended and emulsified.
- Whisk in cider and shoyu until well combined.
- Store in an airtight container in the refrigerator up to 1 week.
