Lemony Chicken With Creamy Basil Sauce
- 1 large lemon
- 2 tablespoons olive oil
- 3 cloves, minced
- 2 teaspoons dried oregano leaves
- salt and pepper
- 6 boneless skinless chicken breasts
- 14 cup caesar salad dressing
- 1 large tomatoes
- 1 green onion, sliced
- 2 tablespoons fresh basil, chopped
- Oil grill and pre heat to medium.
- Finely grate 1 tbsp lemon peel into a large bowl.
- Squeeze 1/4 c juice from lemon.
- Stir in oil, garlic, oregano, salt & pepper.
- Add Chicken & turn to coat evenly.
- Let stand while you prepare the sauce.
- For sauce, pour dressing into a small bowl.
- Cut tomato in half, squeeze out and discard seeds.
- Coarsely chop.
- Stir into dressing and add onion and basil.
- Place chicken on grill.
- Save oil mixture in bowl.
- Grill, covered, 6 minutes.
- Then bastes with oil mixture.
- Discard any remaining oil mixture.
- Turn chicken & continue to grill, covered until chicken feels springy when pressed 6 - 8 minutes.
- Place on platter, spoon sauce over top or serve sauce on the side.
- Excellent with Spinach - Red Onion Salad.
- ** You may want to increase the amount of sauce, it is yummy and I always want more.
