Elegant Seafood Crepes

  1. Melt 2 Tbsp.
  2. of the butter; set aside.
  3. Beat eggs and milk in medium bowl with wire whisk until well blended.
  4. Add melted butter, the flour and salt; beat until smooth.
  5. Let stand 20 min.
  6. Heat lightly greased medium nonstick skillet on medium heat.
  7. Ladle 1/4 cup batter into skillet, tilting pan to form a thin round circle.
  8. Cook 1 to 2 min.
  9. or until edge of crepe is lightly browned.
  10. Carefully turn crepe with spatula; cook an additional 30 sec.
  11. Remove from skillet; cover to keep warm.
  12. Repeat to make a total of 8 crepes.
  13. Melt remaining 1 Tbsp.
  14. butter in small saucepan on medium heat.
  15. Add garlic; cook and stir 2 min.
  16. Gradually add cream cheese, stirring until completely melted.
  17. Add shrimp, crabmeat and tomato sauce; stir.
  18. Cook 10 min.
  19. or until heated through.
  20. Spoon 1/3 cup of the seafood mixture down center of each crepe; roll up.
  21. Sprinkle lightly with nutmeg.
