Easy Moist Sweet Potato Muffins

  1. Shift together the marked ingredients.
  2. Melt the butter in the microwave.
  3. Peel the potato and cut into 1cm slices.
  4. Place on a microwave safe bowl and put in the 600 W microwave for 6 minutes.
  5. The potatoes should be pierced easily with a toothpick.
  6. Mash the potatoes.
  7. Preheat the oven to 180C
  8. Add the sugar and melted butter to the mashed potatoes and combine with a whisk.
  9. Add the heavy cream (or milk) and combine.
  10. Add the egg and the black sesame seeds and combine.
  11. Fold in the shifted ingredients until it is mixed in well.
  12. Add the butter to the muffin cups and bake in the oven for 20~25 minutes.
  13. Done.
  14. With lots of black sesame seeds.
