Easy Moist Sweet Potato Muffins
- 300 grams Asian sweet potato
- 100 grams Butter
- 90 grams Sugar
- 50 ml Heavy cream (or milk)
- 2 Eggs
- 3 tbsp Plain flour
- 1 tsp Baking powder
- 1 tbsp Black sesame seeds
- Shift together the marked ingredients.
- Melt the butter in the microwave.
- Peel the potato and cut into 1cm slices.
- Place on a microwave safe bowl and put in the 600 W microwave for 6 minutes.
- The potatoes should be pierced easily with a toothpick.
- Mash the potatoes.
- Preheat the oven to 180C
- Add the sugar and melted butter to the mashed potatoes and combine with a whisk.
- Add the heavy cream (or milk) and combine.
- Add the egg and the black sesame seeds and combine.
- Fold in the shifted ingredients until it is mixed in well.
- Add the butter to the muffin cups and bake in the oven for 20~25 minutes.
- Done.
- With lots of black sesame seeds.
