Hearty Slovak Stew
- 3 Tbsp. butter or margarine
- 1 large onion, chopped (1 c.)
- 3 small Idaho potatoes, unpared and cut into 1-inch pieces
- 1 medium apple, cored, unpared and chopped (1 c.)
- 1 medium clove garlic, minced
- 1 pkg. (1 lb.) sauerkraut, drained
- 1 can (14 1/2 or 16 oz.) tomatoes, chopped
- 1/2 c. beef broth
- 1 lb. Polish sausage (Kielbasa), cut in 3/4-inch slices
- 1 tsp. caraway seed
- 1/4 tsp. black pepper

- pot, melt butter; add onion, potatoes, apple
- and
- garlic.
- Cook 5 minutes, stirring often. Stir in sauerkraut, tomatoes, broth, sausage, caraway seed and pepper.
- Cover

- simmer
- 30
- minutes or until potatoes are tender.
- Makes 4 hearty servings!
