Mango Chutney Recipe
- 18 very lg. green mangos
- 2 handsfull salt
- 9 lg. green peppers
- 1 can pimentos
- 1 pound currants
- 1 sm. can packed slivered almonds
- 2 cloves garlic
- 1 c. candied ginger
- 8 lbs. sugar
- 2 quarts. vinegar
- 1/2 teaspoon powdered ginger
- 1/2 teaspoon red pepper
- Coarsely chop peppers, pimentos, almonds, currants, and garlic.
- In a large pan, mix the sugar, vinegar, powdered ginger, and red peppers and bring to a boil.
- Combine the two mixtures, and boil 15 min.
- Add in mangos and boil till tender, about 2 hrs.
- Makes about 8 qts.
