Southern Strawberry Shortcake
- 2 c. flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 3/4 c. sugar
- 5 Tbsp. shortening
- 2/3 c. milk
- 1 tsp. vanilla
- butter, leave out until softened
- 1 qt. strawberries
- Preheat oven to 425u0b0.
- Sift the flour, baking powder, salt and 3/4 sugar together into bowl and cut in shortening.
- Combine the milk and vanilla.
- Add to dry ingredients and mix well, knead on a floured surface, then put into a 10-inch round cake pan.
- Bake for about 15 minutes (until light brown top).
- Remove from pan and split.
- Butter while hot.
- Mash the strawberries and stir in remaining sugar.
- Place half the strawberries between layers of shortcake and place remaining strawberries on top.
- Serve with home-whipped cream. Yum! Yum!
- Serves 4 to 6.
