Almost BLT Sandwich
- 2 slices whole wheat bread or whole grain bread, toasted if needed
- 1/2 tablespoon dijon mustard or your favorite mustard
- 4 slices bacon, canadian style fat edges trimmed off if needed
- 2 slices tomatoes vine-ripen or 1 slice steak tomato
- 1 each lettuce leaves or any your favorite green
- Cook the Canadian bacon in a small nonstick skillet until both sides are browned, about 4 minutes.
- Meanwhile spread the dijon mustard over one slice of bread.
- Place the cooked bacon over the mustard.
- Top with tomato slices, lettuce and remaining slice of bread to make a sandwich.
- Serve.
