Southwest Meatloaf with Chipotle Glaze
- 3 pounds Sirloin Or Ground Sirloin Steak
- 1 whole 10 Oz. Package Ground Chorizo Sausage
- 1 cup Smoked Cheddar Cheese, Shredded
- 2 whole Eggs, Lightly Beaten
- 1- 1/2 cup Fresh Breadcrumbs
- 1 Tablespoon Salt
- 1/2 teaspoons Pepper
- 3 Tablespoons Butter
- 3 whole Shallots, Minced
- 1 cup Dry Red Wine
- 1 cup Beef Broth
- 1/2 cups Honey
- 6 Tablespoons Chipotle And Adobo Sauce
- DIRECTIONS FOR MEATLOAF:
- Preheat oven to 350 degrees.
- If using sirloin, pulse in food processor until its in small chunks.
- Dump into mixing bowl.
- Add in chorizo, cheddar cheese, eggs, bread crumbs, salt and pepper.
- Mix with your hands and spread into a sprayed large loaf pan.
- Bake for 40 minutes or until meat thermometer reads 160 degrees.
- Remove from oven and drain any grease in pan.
- DIRECTIONS FOR SAUCE:
- Melt butter over medium heat.
- Add shallots.
- Cook for about 3 minutes, letting shallots soften.
- Add wine and broth.
- Let simmer and reduce by half about 15 minutes or until it thickens.
- Mix honey and chipotle sauce.
- Add this mixture to the thickened wine sauce.
- Simmer again, about 10 minutes.
- Pour over finished meatloaf and return to oven for 10 minutes to allow glaze to get thicker still and soak into meatloaf.
