Sweet Onion Casserole
- 2 lb. Vidalia sweet onions, peeled and sliced
- 1/4 c. dry white wine or sherry
- 3 Tbsp. butter or margarine
- 3 Tbsp. flour
- 1 tsp. chives
- 1/2 tsp. dry mustard
- 1/2 tsp. salt
- 1 c. milk
- 1/2 c. sour cream
- 1 c. shredded Cheddar cheese
- Combine onions, wine and butter in 2-quart covered dish. Cook on High (100%) power for 10 to 12 minutes or until tender, stirring once halfway through cooking time.
- Stir in flour and seasonings.
- Cook on High (100%) power for 30 seconds.
- Slowly stir in milk and sour cream.
- Cook on High (100%) power for 4 to 6 minutes or until thickened.
- Sprinkle shredded cheese over top. Cook on Medium (50%) power for 4 to 6 minutes or until cheese melts.
- Serves 8.
