Mexican Meat Loaf
- 2 lb. hamburger
- 2 c. Minute rice, cooked
- 1 onion
- 1 c. tomato soup
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1/2 jar salsa
- 1 block mild Cheddar cheese
- 1 block Mozzarella cheese
- 1 bag nacho cheese Doritos
- Cook hamburger with chopped onion.
- Add spices.
- Cook rice; let cool some.
- In a big pan, mix soups and salsa; heat on top of stove until it starts to bubble, then add drained hamburger and rice.
- Stir together; let simmer while you grate the cheese. Crush chips and add to mixture.
- Smooth top.
- Sprinkle with both kinds of cheese.
- Put lid on top.
- Turn off heat and let set for a few minutes or until cheese is melted.
