Sweet Chilli Chicken Salad (21 Day Wonder Diet: Day 17)

  1. Bring water to the boil in medium saucepan; add chicken.
  2. Simmer, covered, about 10 minutes or until chicken is cooked.
  3. Cool chicken in poaching liquid 10 minutes.
  4. Drain, and shred coarsely.
  5. Combine chicken in a medium bowl with sprout, capsicum, carrot, chilli, coriander and ginger.
  6. Shake juice and sauces together in a screw top jar, drizzle over salad.
