shrimp ceviche

  1. slice onion very thin
  2. place onion in bowl of cold salted water
  3. cook shrimp for 1or 2 minutes drain and rinse with cold water
  4. finely mince pepper removing seeds and veins
  5. place chili and shrimp in bowl with lime juice
  6. cut one avacado and pineapple into bite size pieces
  7. drain and rinse onions and toss all ingredients
  8. chill for 15 minutes
