Melt in the Mouth Choc-Mint OREO Fudge

• 400 g Pascall Marshmallows
• 120 g butter
• 2 tablespoons water
• 250 g CADBURY Dark Chocolate Melts
• 1 1/2-2 teaspoons peppermint essence
• 150 g packet Classic OREO, reserve 5, then coarsely chop the remainder

1. COMBINE the marshmallows, butter and water in a saucepan and melt together over a low heat, stirring occasionally.
2. Remove from the heat.
3. ADD the chocolate and peppermint essence and stir until the chocolate has melted.
4. Stir in the chopped OREO.
5. SPOON the mixture into a greased and lined 20cm square pan and smooth over.
6. Halve the remaining Oreos and scatter over the top.
7. Refrigerate until firm.
8. Cut into 16 pieces.
9. Store in an airtight container in the refrigerator until required.
