Sugar-Free Applesauce Cake
- 2 c. raisins
- 2 c. water
- 1 c. dates, cut up
- 1/4 c. chopped pecans
- 1 (8 oz.) can crushed pineapple in its own juice, drained
- 2 eggs
- 1 c. unsweetened applesauce
- 1 tsp. vanilla
- 3/4 c. shortening or oleo
- 2 tsp. liquid sweetener
- 2 c. flour
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 tsp. cloves
- 1/2 tsp. salt
- 1 1/4 tsp. soda
- Cook raisins and water together until tender in covered pan until water evaporates.
- Add dates and shortening to hot raisins; stir until blended.
- Add applesauce, vanilla, sweetener and pineapple.
- Add eggs.
- Stir dry ingredients together and add to raisin mixture.
- Sprinkle nuts on top.
- Bake at 350u0b0 for 40 to 45 minutes in a 9 x 13-inch greased pan.
- Serves 16.
