Expresso Chocolate Chip Cookies GLUTEN FREE
- 1 cup butter, softened
- 2 eggs
- 1/2 cup brown sugar, packed
- 1 tsp gluten free vanilla extract
- 2 cup gluten free all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp xanthan gum
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 4 tbsp instant expresso powder
- 1/4 tsp ground cayenne pepper
- 1 cup (6 ounce package) semi - sweet chocolate chips
- 1 cup (6ounce package) white chocolate chips
- 1 cup granulated sugar
- Preheat oven to 350F.
- In a large bowl, cream butter and sugars.
- Add eggs and vanilla; mix well.
- In a separate bowl, combine flour, baking powder, cinnamon, pepper, salt, xanthan gum, and expresso powder; add to butter mixture and mix well.
- Stir in chips.
- Place rounded tablespoonfuls 2 inches apart on parchment paper-lined cookie sheets.
- Bake at 350F for 12 to 16 minutes.
- Cool on cookie sheets for 5 minutes, then transfer to wire cooling racks.
