Hot Chicken Salad
- 4 c. cooked chicken
- 2 Tbsp. lemon juice
- 3/4 c. mayonnaise
- 2 c. celery
- 1 c. water chestnuts
- 1/2 c. almonds
- 4 hard-boiled eggs
- 1 tsp. salt
- 3/4 c. chicken or mushroom soup, undiluted
- 1/2 c. fresh onion
- 1/4 c. red pimentos
- 1/2 tsp. garlic powder
- 1 tsp. mixed herbs (rosemary or thyme)
- 1/2 c. Cheddar cheese
- 1 1/2 c. potato chips
- Dice chicken.
- Chop the celery and water chestnuts.
- Sliver almonds.
- Chop eggs.
- Soup is added along with chopped onion and pimento.
- Mix garlic powder and herbs in mayonnaise and lemon juice.
- Fold into mixture and bake with topping of grated cheese and crushed potato chips at 350u0b0 for 40 minutes.
