Sausage And Potato Casserole Recipe
- 4 med. potatoes, grated for hash browns
- 2 tbsp. minced onion
- 2 tbsp. butter
- 1 c. sharp Cheddar cheese, grated
- 1 pound sausage, cooked and liquid removed
- 4 Large eggs
- 1/2 c. lowfat milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Fry potatoes and onion in butter till golden; place in greased 8 or possibly 9 inch glass baking dish.
- Top with cheese.
- Crumble sausage and spread over cheese.
- Combine Large eggs, lowfat milk, salt and pepper; pour over sausage.
- Bake at 350 degrees for 30-35 min.
- Serves 6.
- Can be prepared ahead of time to freeze or possibly chill.
- Don't add in egg mix till ready to bake.
