Beans And Rice Salad
- 1 (15 oz.) can black beans, drained
- 1/4 c. commercial Italian salad dressing
- 1/4 tsp. pepper
- 3/4 c. long grain rice (uncooked)
- 1/4 c. commercial Italian salad dressing
- lettuce leaves
- 3/4 c. (3 oz.) shredded Cheddar cheese
- 3 green onions, thinly sliced
- 1 medium tomato, chopped
- sour cream (optional)
- Combine the first 3 ingredients; cover and chill at least 8 hours.
- Cook rice according to package, omitting salt if desired. Rinse with cold water; drain.
- Combine rice and 1/4 cup salad dressing, stirring well.
- Chill at least 8 hours.
- Spoon rice onto individual lettuce-lined plates.
- Spoon bean mixture over rice. Top with cheese, green onions, tomato and, if desired, sour cream. Makes 4 servings.
