Beans And Rice Salad

  1. Combine the first 3 ingredients; cover and chill at least 8 hours.
  2. Cook rice according to package, omitting salt if desired. Rinse with cold water; drain.
  3. Combine rice and 1/4 cup salad dressing, stirring well.
  4. Chill at least 8 hours.
  5. Spoon rice onto individual lettuce-lined plates.
  6. Spoon bean mixture over rice. Top with cheese, green onions, tomato and, if desired, sour cream. Makes 4 servings.
