Watermelon Cooler
- 4 cups cubed and seeded watermelon
- 2 tablespoons agave syrup
- 12 teaspoon finely grated lime zest
- 2 tablespoons fresh lime juice
- 1 teaspoon minced gingerroot
- of fresh mint
- In a blender, puree watermelon, agave syrup, lime zest and juice and ginger until smooth and liquidy.
- Transfer to a pitcher, cover and refrigerate until chilled, about 3 hours.
- Serve cold, garnished with mint.
