Butterfly Orange Muffins

  1. Combine flour and sugar in a large mixing bowl.
  2. Blend together egg, milk, shortening, and orange rind.
  3. Add liquid all at once to flour mixture, stirring only until flour is moistened.
  4. Fill greased muffin pans 23 full.
  5. Place 2 orange sections on each muffin in opposite directions to form a butterfly.
  6. Bake at 425F (220C) for 20 to 25 minutes or until golden brown.
