Lentils with Summer Vegetables

  1. Put everything in a large pot, bring to a boil, reduce heat, cover and simmer about 30 to 40 minutes.
  2. Remove bay leaf.
  3. Serve over brown rice (or maybe potatoes).
  4. Makes 4 reasonably sized servings.
  5. NOTE: Use which ever vegetables you have on hand.
  6. Vary to suit yourself.
  7. Leeks are great in this.
  8. If you'd want this to be more soup-like, add more water and a can of tomatoes, pureed.
