Southern Caviar
- 1 can (15 Oz. Can) Black-eyed Peas, Drained And Rinsed
- 1 can (15 Oz. Can) Black Beans, Drained And Rinsed
- 1 can (15 Oz. Can) Whole Kernel Corn, Drained
- 2 whole Large Tomatoes, Seeded And Diced
- 1 whole Medium Onion, Diced
- 1 whole Medium Green Bell Pepper, Diced
- 3 Tablespoons Minced Garlic, About 8 Cloves
- 1/2 cups Chopped Cilantro
- 1 whole Jalapeno Pepper, Seeded And Finely Chopped
- 1 Tablespoon Fresh Lime Juice
- 1 teaspoon Italian Seasoning
- 1 package (0.7 Oz. Packet) Dry Italian Dressing Mix
- 1/2 cups Extra Virgin Olive Oil
- 1/2 cups Vinegar
- 1 teaspoon Kosher Salt
- Combine all the salsa ingredients in a large bowl.
- Stir well.
- Combine dressing ingredients.
- Pour over the salsa mixture.
- Stir well.
- Chill for at least 2 hours.
- Serve with tortilla chips.
