Strawberry Bread
- 2 c. frozen, unsweetened, whole strawberries
- 3 c. plus 2 Tbsp. flour
- 2 1/4 c. sugar
- 1 Tbsp. cinnamon
- 1 tsp. salt
- 1 tsp. baking soda
- 1 1/4 c. oil
- 4 eggs, beaten
- 1 1/4 c. chopped pecans
- 2 Tbsp. superfine or regular sugar
- Place strawberries in medium bowl; sprinkle lightly with 1/4 cup sugar.
- Let stand until thawed, then slice.
- Combine flour, 2 cups sugar, cinnamon, salt and baking soda in large bowl; mix well.
- Stir oil and eggs into strawberries; add strawberry mixture to flour mixture; add pecans and blend until dry ingredients are just moistened (do not overmix).
- Divide batter between two 4 1/2 x 8 1/2-inch pans that have been greased and floured.
- Bake 45 to 50 minutes at 350u0b0.
- Cool bread in pans for 10 minutes, then turn loaves out and cool completely.
- Sprinkle tops of loaves with sugar.
