Broccoli Rice Pie Recipe
- 3 c. warm cooked rice
- 1 1/2 c. grated Cheddar cheese, divided
- 2 Large eggs slightly beaten
- 1/2 teaspoon salt
- 1/2 c. minced onion
- 2 (10 ounce. each) Packages frzn minced broccoli
- 1/2 c. lowfat milk
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 1 c. sliced mushrooms (4 ounce.) liquid removed
- Combine rice, 3/4 c. cheese, 2 Large eggs and 1/2 tsp.
- salt.
- Press firmly and proportionately in bottom and sides of greased 12 inch pizza pan or possibly two 9 inch pie pans.
- Set aside.
- Add in onions to broccoli and cook according to package directions.
- Drain well.
- Combine 4 Large eggs, lowfat milk, pepper, salt and mushrooms.
- Add in to broccoli and mix well.
- Spoon into crust.
- Bake 20 min at 375 degrees.
- Sprinkle with remaining cheese.
- Bake 10 min longer.
- Cold a few min before cutting in squares or possibly wedges.
