Crock-Pot Minestrone Soup
- 1 medium onions chopped
- 2 medium carrots thinly sliced
- 2 each celery stalks diced into 1/2 inch pieces
- 1 each sweet red bell peppers diced into 1/2 inch pieces
- 1 each zucchini sliced 1/4 inch thick
- 2 each garlic cloves minced
- 29 ounces vegetable stock
- 28 ounces tomatoes crushed
- 31 ounces kidney beans, canned drained
- 2 teaspoons marjoram dried
- 1/4 teaspoon black pepper
- 1 1/2 cups rice, cooked
- Add all ingredients except the rice to Crock-Pot.
- Cover, cook on Low 8 to 10 hours.
- Add the cooked rice and stir to combine.
