Easy and Cheap Daigaku-Imo Kimpira with Sweet Potato Skins

  1. Peel the sweet potato rather thickly.
  2. Shred the skin and soak in water.
  3. Drain well in a colander or a sieve.
  4. Use the insides for something else.
  5. Heat a generous amount of oil in a frying pan and stir-fry the potato skin thoroughly until it's crispy.
  6. Add honey and black sesame seeds and mix well.
  7. Drizzle some soy sauce from the edges of the pan and mix everything together.
  8. Enjoy!
