Stir-Fried Chicken and Kamatsuna with Curry Mayonnaise

  1. Slice the chicken into bite-sized pieces on the diagonal.
  2. Season with the sake and salt.
  3. Then rub in the katakuriko and vegetable oil.
  4. Parboil the komatsuna, and cut into 3-4 cm lengths.
  5. Stir-fry the Step 1 chicken.
  6. When the surface is browned, sprinkle with a dash of salt, and 1 tablespoon of sake.
  7. Cover with a lid, and steam-fry.
  8. When the chicken is cooked through, add the curry powder and mayonnaise, and mix.
  9. Add the komatsuna at the end, briefly mix, and you're done.
