Ohio Squash Pancakes
- 2-1/2 lb. yellow summer squash
- 3 lg. eggs, beaten
- 1 cup all-purpose flour
- 1/2 cup milk
- 2 tsp. salt
- 1/4 tsp. white pepper
- 2 tbsp. grated onion
- Vegetable oil, for frying
- Grate the uncooked squash.
- Beat in remaining ingredients except for the oil.
- Drop by tablespoons into a little hot oil in skillet.
- Brown on both sides and serve hot.
