Simple Cupcakes
- 100 g caster sugar
- 100 g soft butter
- 100 g self-raising flour
- 1 large whisked egg
- 1 teaspoon vanilla essence
- Pre heat the oven at 180C (350F/gas mark 4).
- Put the cases in the cupcake tray.
- Creme the sugar and butter together in the bowl, then add the beaten egg and vanilla.
- Mix until combined.
- Next sift in the flour and mix again until the batter is fluffy and has a dropping consistency.
- Add dashes of milk if necessary.
- Plop a tablespoon of batter in each case and then pop in the oven 15-20 mins or till golden.
- Take out and leave for 10-15 mins to cool.
- If you want to put icing on, make sure you do it after you've let them cool.
