Healthier Meatloaf

  1. place all vegetables into a food chopper and chop them down to very fine pieces.
  2. Place boullion cube and water in a small bowl and microwave for one minute, or until cube is disolved.
  3. Mix all ingredients together in a large bowl-turn into a loaf pan greased with cooking spray.
  4. Bake at 350 degrees for 30 to 45 minutes, to desired doneness.
  5. I have also made this into patties and "fried" them in a pan with a quick spray of cooking spray.
  6. I might try the George Forman Grill one of these days also, not sure if it will work or not.
