Almond Chocolate Chip Energy Balls

  1. Add all ingredients except chocolate chips, pumpkin seeds, and water to a blender.
  2. Pulse 15-20 times, until the dates have been broken down and the mixture is coarsely chopped.
  3. Scrape sides if necessary.
  4. Add chocolate chips, pumpkin seeds, and water and pulse 3-5 more times, until all ingredients are incorporated.
  5. Shape into balls using a tablespoon scooper.
  6. Store in an airtight container and refrigerate.
  7. Keeps up to 2 weeks.
